I typically make it with regular Cool Whip and Jello, but this time I substituted Sugar-free Jello and Cool Whip Free, with equally good results. It doesn't get much easier than this with only 4 ingredients!
1 (16 oz.) cottage cheese (preferably small curd)
1 (16 oz.) cottage cheese (preferably small curd)
1 (3 oz.) package orange gelatin
1 (15 oz.) can mandarin oranges, drained
1 (8 oz.) carton Cool Whip, thawed

Note To Self: Do not read Mimi's Making Meals blog before Lunch, it will cause your stoamch to eat itself and then nothing that you eat could possibly compare to the amazing meals you saw pictured on the site.
